Align boring and crankshaft clearancing are two different operations.
I can almost say any engine case with a fair amount of time on it will need align bored no matter what your plans are.
Align boring is the process of machining the main bearing tunnel through the case to correct any "pounding" that usually occurs in a magnesium case.
This is the surface where the bearing locates after align boring.

Crankshaft clearancing is just that, removing material in the case to swing a larger than stock crankshaft.
Here is an example.

How far you need to go depends on how big the stroke is.
IMHO if you are gonna clearance one for a stroker crank, might asa well be a big one..........

One other thing, if you go bigger than about 76, you'll need to clearance the camshaft too.
