I'm running a pair of shocks that have small airbags built into them (gabriel hi-jackers), and I also have a pair of cheap nitrogen shocks.

(I'm running the hi-jackers to help hold up my heavy engine)

I'm wondering, would it make the ride better or worse if I ran both pairs?

By adding additional shocks you will increase the dampening effect. It will make the ride stiffer however if you are bottoming out a lot it will help. Typically when using dual shocks they are set up to stage Compression and rebound or to split the load of the Buggy between the two sets.

Yeah, I'm just not sure how the hi-jackers are going to react. I think they are going to be pretty stiff because of the airbag in them being so small, but i'm going to run as little pressure as possible.

They seem like they might be a little bouncy though too (being airbags), so that's why I was wondering about the extra shocks.

I'm just wondering if anyone else might have any better predictions than me on this subject.

I will assume at this point you have torsion bars. They are what will determin your ride height. You may have to increase the diameter to accomadate the additional motor weight. In the event you do that the shock valving may need to be changed to accomadate the stiffer torsions.
