I can tell you how it's done on real race car motors. Not sure how it would equate to VW, but it can't be much different.

Starting at the tank through an in line filter to the oil pump. Through the oil pump, through a good filter into the motor. Out of the motor through a filter(s) into the scavenger section(s) of the pump, through a filter(s) into the tank.
Each component needs filter protection. The pump should have a filter before it, the motor needs to have a filter before it and the tank needs a filter before it.

here is the paper that came with my bugpack drysump pump

Image

this is how mine is done with one exception, instead returning back into the engine at the normal "full flow" location like in the pic, mine is returned back in on the top of the motor at the factory cooler location using one of the aluminum 2 port remote cooler adaptors, top port is plugged and line from cooler goes to bottom port

I agree they probably need more than 1 filter but the supply side of the pumps are not designed to suck through a filter although I have seen some with wire mesh screen in the "out" part of the tank and some folks run a Oberg type filter or regular screw on filter in between the pump and tank on the return side but there again the scavenge side of the pump is designed to pump volume not pressure which is caused by the resistance of a "regular" screw on oil filter

as for hose I run 1/2" parker brand push loc hose and fittings, it is reinforced and can handle the pressure and suction, however I have seen the brass barbs and regular oil hose I don't recommend it because after a while it can suck together once the oil gets hot, as for hydraulic hoses, I have used them but hate them because they are so stiff and hard to work with plus the I.d. of the fittings are small and cause restrictions
