 Post subject: who's got a recipe?

looking for a good recipe for some "mild" to "hot" pickled eggs. there was a "country" store that used to make and sell them in quart jars but no longer do since ownership changed a few year ago. i have tried a few recipes i found on the net but none are near as good as the ones the store had.

I used to work with a guy that loved pickled eggs and the hotter the better. He would sometimes make them with beets and sometimes not. This is the recipe he gave me a long time ago. I'm not a huge fan but you could try it. He always said they were good.

1 jar jalapenos
1 onion thinly sliced
12 hard boiled eggs peeled
1/4cup white sugar
1/2cup white vinegar
Drain liquid from jalapenos into saucepan. Place eggs, onions an jalapenos in a large container (jar of choice). Add sugar and vinegar to jalapeno liquid in saucepan and bring to a boil, reduce heat and simmer 15min. Pour jalapeno "sauce" mixture into container with eggs, onion and peppers. Seal and refrigerate. Leave them in the fridge at least three days before eating, the longer they sit , the better they taste. enjoy!

that sounds pretty good forty, do you know if they MUST stay refrigerated, some of the ones i found on the net said refrigerate and others said they fine stored at room temp?

I think pickling them preserves them. I'd guess you could try it without keeping them in the fridge. No idea really. He always had a jar in our shop fridge. He used to do the same thing with cauliflower, I didn't care for it either. lol

I'd go with forty's concoction. It's very close to my wifes and mother in laws and the Amish recipes i've known, and they are to die for. Throw the heat in and add a few Yuenglings, and you won't have any passenger issues either, however they make you pick up the rear of the pack ???? :D :D :mrgreen:
