How can you tell where to adjust the cylinder to before the throw out bearing goes to far?? And I should probably do this with the engine off ?

You want the cylinder to be able to float about 1/8" between the solid mount and the clutch lever. Are you thinking that the cylinder will pull it to far? If so I have never had that problem with my setup. and yes adjust with motor off.

I have never seen a hydraulic cylinder pull to far. You mainly want to be concerned about having a little free play at the slave cylinder. If by chance you run into a situation where the throwout bearing pushes to far, you will hear it. If that is the case, you will need to install some type of mechanical stop for your clutch petal.
